A TIME TO APPRECIATE AND FEEL GRATITUDE

Happy Yuletide everyone!

In Gt. Britain we say Happy Christmas. Here in the U.S. it is customary to say Happy Holidays.

As this year begins to draw to an end, so many people look to the next year with the hope of better times. They are also looking forward to spending Christmas time with family and friends that they rarely get to see throughout the year. 

A time to appreciate and feel gratitude for what you have that is positive in your life, and an opportunity to reflect on the experiences that have not served you, but you have learned from.

THE BEST SWEET POTATO SOUP

THE BEST SWEET POTATO SOUP

 

3 lbs. Organic SWEET POTATOES washed, topped and tailed and cut into 1” chunks (Leave the skins on)

2 Tbsp. Unsalted BUTTER

2” Fresh GINGER ROOT peeled and diced

2 Tsp.  HIMALAYAN PINK SALT

1 Qt. VEGETABLE STOCK

1 Large Organic ONION peeled and chopped

2 Tbsp. MAPLE SYRUP

2 Tbsp. Low Sodium SOY SAUCE

Juice of 1 Large LIME or LEMON

 

In a large saucepan add the ginger root, onion, salt and butter. Saute slowly with the lid on stirring periodically.  Make sure to not let the ingredients burn.  10 minutes should do it. Add the sweet potatoes and cover with the vegetable stock.  Stir well.  Add a little more water if necessary.  Bring the liquid to a gentle simmer and cover. Cook for about 30 minutes or until the sweet potatoes are tender. Turn off the heat and add the maple syrup, lemon or lime juice and soy sauce.  Stir well and let cool to room temperature. Put the saucepan in the fridge over night. Next day.  Remove from the fridge and stir well. Using a blender,  puree the liquid.  Reheat the soup in another saucepan adjusting the salt to taste. Serve in individual bowls with freshly ground BLACK PEPPER and garnished with fresh PARSLEY LEAVES.

This soup will freeze well stored in empty 32 oz. yoghurt containers with tightly sealed lids for several days. (Please do NOT dilute, and make sure the lids are on tight). Defrost thoroughly before heating.

THE COLOR ORANGE

I went to the Huntington Library in San Marino and walked around the botanical gardens.  Then I  spent a few minutes listening to Medieval  Christmas carols being sung outside the Huntington Art Gallery.  

 

This has got to be one of my most favorite places to spend time in. Henry and Arabella Huntington founded this world famous establishment at the end of the 1800's.  I shall always be grateful to them.

 

The cactus and succulent gardens displayed tall orange poker flowers soaring from giant aloe plants, and the herb garden presented several different kinds of sage and oregano.  Some of the Julia Child rose bushes were still in bloom with their golden yellow colored flowers. Julia chose this particular color as it resembled butter to her.  She was certainly not afraid to use this ingredient lavishly in her cook book recipes. 

 

I am going to make a pot of the most delicious sweet potato soup this week. The recipe was given to me by a fellow traveler when I was in Thailand a few years ago which I have adapted and will post on my website to share. Sweet potatoes are packed with antioxidants and abundant this time of year. Please remember to choose organic.

EATING FRUITS AND VEGETABLES IN SEASON

I really enjoy going to Farmers Markets to buy my produce.  With each season comes an abundance of produce all locally grown and mostly organic, which is as we know the way to go nowadays. 

 

Eating fruits and vegetables in season means they are always at their best.  

 

Autumn and Winter time bring an awry of orange and red.  Oranges, persimmons, sweet potatoes. This is also a great time of the year for apples, pears and pumpkins of course!  

 

I am a big fan of using fresh herbs to enhance flavors, as well as adding extra nutrition. 

 

Designing a menu that incorporates fruits and vegetables in season is a must in my book. Paired with a wine from a boutique wine producer and you are all set for a meal to remember.

Jane Scobie is originally from Great Britain and has made Los Angeles her home for more than 20 years.  Prior to launching Jane Scobie Event Planning, Jane enjoyed a long and successful career in the music industry on the upper management level.

Seeking a new challenge, she decided to indulge her passions for the culinary arts, fine wine, and the fun of hospitality and launch Jane Scobie Event Planning.

Jane is the author of a vegetarian cookbook with an international flavor and holds a Junior Wine Executive credential through LearnAboutWine School.
